Required products :

  • 14 graham crackers
  • 7 tablespoons melted butter

For the filling:

  • 2 teaspoons cooking cream
  • 1/2 cup crystal sugar
  • 2 teaspoons lemon peel
  • 1/3 tea cup of lemon juice

For decoration:

  • sliced ​​strawberries, raspberries, halved cherries, mangoes and edible flowers
  • chocolate butterflies

 

Method of preparation :

Grind the crackers in a food processor. Add the melted butter and combine.

Take 6 small cake tins with a falling bottom with a diameter of 20 centimeters and distribute the mixture inside. Press the crackers on the bottom and on the walls and put them in the fridge to cool.

Meanwhile, prepare the lemon cream: in a small saucepan, mix the cream and sugar, heat on low heat and stir until the sugar dissolves (about 5 minutes). Increase the temperature and bring to a boil. After a minute, remove from the heat and add the lemon zest and juice. Wait 20 minutes for the cream to cool, then fill the cooled marshmallows with it.

Refrigerate for at least 2 hours, preferably overnight.

Garnish with the fruit and chocolate butterflies you can make by folding parchment paper in half and then dissolving. Using a pouch or a bag with a cut end, draw the butterfly wings on either side of the fold, then place chocolate between the two wings so that you can connect them. Fold the paper slightly to keep the wings up and let the chocolate harden, then use for decoration.
