How To Cook Lentil And Couscous Meatballs In Tomato Sauce With Garlic - Recipe

Required products :

1 teaspoon red lentils

1 teaspoon couscous

2 onions

300 grams of tomatoes in their own sauce (100 ml of tomato juice for meatballs and 200 grams of tomatoes for sauce)

100 grams of fresh parsley

salt and ground black pepper to taste

3 tablespoons olive oil (2 for frying onions and 1 for sauce)

4 cloves garlic

1 tablespoon dried coriander - for the sauce

1 teaspoon nutmeg - for the sauce

 

Method of preparation :

Wash the lentils, pour it into a saucepan and pour 2 teaspoons of water. Add salt to taste. Put on the stove and when it boils, let it simmer for 10-15 minutes (or until done). There should be some water left.

Remove from the heat, add the couscous, stir, close the pan with a lid and leave for 15 minutes.

Meanwhile, chop the onion finely and fry it until golden in olive oil. Pour the tomato juice, add salt and pepper to taste. Stir and after 1 - 2 minutes remove from heat. Add the chopped parsley, stir again and pour the mixture over the lentils and couscous. Stirring follows.

From the resulting minced meat form meatballs and bake them in a dry pan without fat for 1 minute on each side. It is preferable to use a container with a non-stick coating.

You can serve the dish both hot and cold.

To make the sauce. Peel a squash, grate it and add the garlic, coriander, nutmeg, a tablespoon of olive oil, salt and pepper to taste. Puree everything and place on the stove. When the mixture boils, leave on low heat for 1-2 minutes and turn off.

The sauce is served cold.
