How To Cook Lentil And Egg Casserole - Recipe

Required products :

  • 1 cup red lentils
  • 1 cup yellow lentils
  • 4 eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon onion, ground or finely chopped
  • 2 cloves garlic, minced
  • 4 tea cups chicken or vegetable broth
  • salt and freshly ground black pepper
  • 2 teaspoons smoked paprika
  • 1 cup fresh parsley, finely chopped

Method of preparation :

  • Rinse the lentils under plenty of cold running water. Drain and set aside.
  • In a medium saucepan, sauté the onions and garlic for about 3-4 minutes over medium heat.
  • Add the lentils and sprinkle with the smoked paprika. Stir well.
  • Add the broth, increase the heat until the lentils boil and reduce again.
  • Cook under a lid for 30-35 minutes. The grains will soften and swell and the mixture will look like a slurry.
  • Season with salt and pepper and add the chopped parsley. Stir.
  • Grease the bottom and walls of 4 pots and distribute the lentils.
  • Make a deep indentation in the center and beat one egg at a time. Sprinkle with salt and pepper.
  • Bake in a preheated 180 degree oven for about 20 minutes.
  • Serve the pots warm, garnished with lettuce.
