Required products :

1 cup red lentils
1 cup yellow lentils
4 eggs
1 tablespoon olive oil
1/2 teaspoon onion, ground or finely chopped
2 cloves garlic, minced
4 tea cups chicken or vegetable broth
salt and freshly ground black pepper
2 teaspoons smoked paprika
1 cup fresh parsley, finely chopped

Method of preparation :

Rinse the lentils under plenty of cold running water. Drain and set aside.
In a medium saucepan, sauté the onions and garlic for about 3-4 minutes over medium heat.
Add the lentils and sprinkle with the smoked paprika. Stir well.
Add the broth, increase the heat until the lentils boil and reduce again.
Cook under a lid for 30-35 minutes. The grains will soften and swell and the mixture will look like a slurry.
Season with salt and pepper and add the chopped parsley. Stir.
Grease the bottom and walls of 4 pots and distribute the lentils.
Make a deep indentation in the center and beat one egg at a time. Sprinkle with salt and pepper.
Bake in a preheated 180 degree oven for about 20 minutes.
Serve the pots warm, garnished with lettuce.
