How To Cook Lentil Cream Soup With Smoked Salmon, Chives And Croutons - Recipe

Learn how to cook "Cream of lentil soup with smoked salmon, green onions and croutons". Delicious recipe.

Required products :

  • 300 grams of red lentils
  • 1 liter of water or fish broth
  • 1 onion
  • 1 carrot
  • 200 grams of smoked salmon
  • 1/2 bunch green onions
  • 3 tablespoons olive oil
  • 50-100 milliliters of cooking cream with a fat content of 22% - optional
  • croutons (wheat or rye bread)
  • 1 teaspoon curry powder
  • salt and pepper to taste
  • 1 teaspoon sugar

 

Method of preparation :

Peel an old onion and a carrot and cut them into large pieces, then fry until soft in hot olive oil. Add a little salt and sugar.

Pour the broth, pour the washed lentils into it and let it boil for about 15 minutes (until ready) on low heat. At the end of cooking, add salt and pepper.

Puree the soup with a blender, which you turn on at high speed. A tender texture should be obtained.

If you are going to use cream, now is the time to add it to the puree, wait for the mixture to boil and remove from the heat.

Make croutons by cutting white or black bread into small cubes and bake them in the oven.

Finely chop the salmon and green onions and mix.

Divide the soup into bowls and add a little of the onion-fish combination and the crispy croutons to each portion.

Sprinkle with curry powder and serve.
