How To Cook Lentil Meatballs With Appetizing Basil Pesto - Recipe

Required products :

For the meatballs :

  • 2 teaspoons boiled lentils
  • 1 clove of garlic, finely chopped
  • 4 egg whites / or 2 eggs /, beaten with a fork
  • 1/2 teaspoon yogurt
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon breadcrumbs
  • 1/4 teaspoon salt
  • freshly ground black pepper

For basil pesto :

  • 1/4 tea cup cedar nuts
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup fresh basil
  • 2 tablespoons parmesan
  • 2 tablespoons water for dilution

Method of preparation :

 

  • Mash the lentils and garlic in a blender until smooth. Transfer the mixture to a large bowl.
  • Add the eggs, yogurt, parmesan, parsley, thyme, salt and pepper. Stir well.
  • Add the breadcrumbs, stir and let the mixture stand for at least 15-20 minutes.
  • Use 1 tablespoon to form meatballs of approximately the same size.
  • Lightly grease a non-stick frying pan over medium heat.
  • Add the meatballs and bake for 15-20 minutes, turning them periodically. Remove from the heat.
  • Mix the ingredients of the basil pesto in a blender and puree until smooth and creamy. Add a little water or lemon juice if you want to dilute it.
  • Serve the lentil meatballs hot, garnished with the appetizing basil pesto.
