How To Cook Lentil Meatballs With Bulgur And Tahini Sauce - Recipe

Required products :

  • 150 grams of bulgur
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 stalk of celery, finely chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1/2 teaspoon dried hot pepper flakes
  • 2 crushed garlic cloves
  • 150 grams of red lentils
  • 425 milliliters of vegetable broth
  • a handful of parsley, finely chopped
  • 4 tablespoons tahini
  • the juice of 1 lemon
  • 200 grams of red cabbage, thinly sliced

Method of preparation :

Put the bulgur in a bowl and cover it with warm water (about 40 degrees) and let it stand for 15 minutes, then drain.

Put half of the olive oil in a saucepan and fry the onion for 8 minutes until soft. Add the tomato puree, cumin, hot pepper and 1 crushed garlic clove. After a minute, add the lentils and vegetable broth. Boil until ready under a lid - for about 20 minutes.

Turn off the hob and remove the lid. Leave on the switched off hob for 10 minutes until the lens absorbs the liquid. Add bulgur and 1/2 of finely chopped parsley. Mix well and season with salt and pepper to taste.

Take 1 teaspoon of the mixture and form a small meatball from this amount. Arrange them in a baking tray lined with parchment paper.

Bake them at 200 degrees in a preheated oven for about 20-25 minutes until golden.

Crush the remaining clove of garlic and season the tahini with it. Add 1 tablespoon of lemon juice and 125 milliliters of water. Stir to make a sauce that you season with salt and pepper to taste.

Add the remaining parsley to the thinly sliced ​​cabbage and add the remaining lemon juice.

Serve the meatballs with the salad and tahini sauce.
