How To Cook Lentil Meatballs With Mushrooms And Flaxseed - Recipe

Required products :

  • 1 cup lentils
  • 2 teaspoons water
  • 2 cloves garlic, finely chopped
  • 1/2 onion, finely chopped
  • 1 1/2 teaspoons salt
  • 220 grams of mushrooms, chopped
  • 1/2 cup oatmeal
  • 2 tablespoons ground flaxseed
  • 2 tablespoons maple syrup
  • 1 teaspoon dried sage and fennel seeds
  • 1/4 teaspoon black pepper
  • 4 tablespoons oil

Method of preparation :

Wash the lentils well under running water (use a fine colander).

Bring 2 cups of water to a boil and add the lentils, garlic, onion and 1/4 teaspoon of salt. Reduce heat to low and cook, stirring occasionally, until the lentils are cooked through - about 20-30 minutes.

Meanwhile, with a food processor, cut the mushrooms into small pieces to make very small pieces. Add to them oatmeal, flaxseed, maple syrup, fennel and sage, the remaining salt and combine with a few pulsations.

Drain the cooked lentils and put them in the food processor with the other products.

Again, make 10 pulsations, each lasting no more than 1-2 seconds.

Form 20 small meatballs from the mixture.

Heat 2 tablespoons olive oil in a pan and fry the meatballs in batches for about 3 minutes on each side. Turn them carefully because they can be easily separated, so choose a larger and wider spatula. If necessary, add more fat between batches.
