How To Cook Lentil Soup With Bacon And Sweet Potatoes - Recipe

Diversify ordinary lentil soup by adding sweet potatoes, roasted tomatoes and bacon. This option is suitable if you plan to collect on the weekend, because it can be prepared up to three days in advance and stored in the refrigerator. It is even tastier when it stays.

Required products :

  • 8 strips of bacon, cut into small pieces
  • 1 medium onion, chopped
  • 2 stalks of celery, chopped
  • 3 large garlic cloves, chopped
  • 1 teaspoon ground cumin
  • 1 large sweet potato, peeled and cut into small cubes
  • 1 and 1/2 tea cups dried brown lentils
  • 8 teaspoons chicken broth
  • 1 can of roasted tomatoes
  • 2 teaspoons sea salt
  • 1/4 teaspoon black pepper
  • fresh parsley leaves, shredded

Method of preparation :

Bake the bacon in a cast iron skillet over medium-high heat, stirring often, until crispy (about 10 minutes). Put the pieces of bacon in a plate covered with kitchen paper. Leave 2 tablespoons of the separated fat, and discard the rest or use in another dish.

Fry the onion, celery and garlic in the same pan with the separated 2 tablespoons of fat. Cook until the vegetables are soft, stirring often. Season with cumin and stir constantly for 1 minute. Add the diced sweet potatoes, lentils, chicken broth, tomatoes, salt and pepper. Bring to a boil, then reduce the temperature and simmer until the lentils are soft (45-50 minutes).

Serve the soup in 6 bowls, garnish with bacon and sprinkle with fresh parsley.
