How To Cook Lentil Soup With Chickpeas, Almonds And Nettles - Recipe

Necessary products:

 

  • 1 cup lentils
  • 1 cup chickpeas
  • 1 peeled onion
  • 50 grams of fresh nettle
  • 1 carrot
  • 1 tomato, peeled and grated
  • 2 finely chopped red peppers
  • 2 sprigs of fresh mint
  • 1 teaspoon savory
  • salt, black pepper, paprika
  • olive oil for frying
  • 50 grams of crushed almonds
  • 2 tablespoons tomato paste
  • 1-2 liters of water

 

Method of preparation:

 

Soak lentils and chickpeas in water, leave them overnight and boil them in the morning. Strain and set the beans aside.

Pour olive oil in a saucepan, heat and fry finely chopped onions, carrots, tomatoes, nettles and peppers. Add the lentils, chickpeas and season with chopped fresh mint, savory, salt, black and red pepper.

Put the tomato puree, stir and pour the water. Let the soup simmer on low heat for an hour. Cool, pour into bowls and sprinkle with crushed almonds.
