Required products :

  • 2 liters of vegetable or chicken broth
  • 2 teaspoons lentils
  • 200 grams of feta mermaid
  • 400 grams of canned tomatoes in their own juice
  • 1 large spinach connection
  • 1 medium onion
  • 3 stalks of celery
  • 1 teaspoon dried thyme
  • 2 teaspoons oregano
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • freshly ground black pepper
  • left

 

Method of preparation :

Peel an onion, cut it into small cubes. Cut the celery stalks into 2-3 pieces lengthwise, then turn them into small cubes.

Fry the two vegetables for 5-7 minutes (until soft) in olive oil over medium heat.

Peel the tomatoes and mash them with a fork. Pour them into a saucepan (along with the liquid), add the thyme and oregano, stew for five minutes.

Then pour the broth over the tomatoes, wait for the mixture to boil and pour the lentils into it. Boil it for about 40 minutes (until the beans soften).

Meanwhile, remove the rough parts and stems from the spinach, cut the leaves into large pieces. Crush the garlic cloves with a knife, peel them and chop. Then crush to obtain a coarse slurry.

Once the lentils are cooked, add salt and pepper, pour the lemon juice, add the spinach and garlic. Two minutes later, remove the pan from the heat.

Mash the feta cheese with a fork. Divide the soup into bowls or deep plates and garnish each portion with the pieces of cheese.
