Lentils with roasted vegetables are rich in flavors, the aromas of roasted peppers are very rich. Prepared in this way, the lentils turn from an ordinary dinner into a tempting dish.

Required products :

  • for roasted vegetables: 3 small tomatoes, chopped
  • 1 red and yellow pepper
  • 1 tablespoon olive oil
  • 1 head of garlic, cut in half
  • salt and pepper

for the stew:

  • 30 grams of butter
  • 2 teaspoons harissa paste
  • 1 teaspoon sumac
  • salt and pepper
  • 3 teaspoons olive oil
  • 1 teaspoon broth (vegetables)
  • 1 cup boiled lentils
  • 1 tablespoon dried parsley
  • 1 stalk green onion for garnish

Method of preparation :

Prepare the vegetables, cut them all into large pieces and place in a pan. Put the two halves of the garlic head. Drizzle with olive oil and season, mix well with your hands.

Turn on the oven and bake for 20 minutes at 180 degrees.

Transfer the vegetables to the bowl of the food processor. Squeeze the garlic cloves and puree the vegetables.

Put the vegetable mixture with a saucepan and place on a hot plate on medium heat. Add the butter, harissa paste, sumac and 1 tablespoon of olive oil. Season with salt and pepper.

Stir and add the broth and lentils. Cover with a lid and cook for about 10 minutes until the lentils are cooked through.

Add parsley and stir.

Serve with olive oil and sprinkle with pieces of green onion.
