Method of preparation:
Mix the starch and milk in a saucepan, place on the stove. Bring to a boil until thickened and then add the butter. Transfer the cream to another bowl and as soon as it cools, pour in the flour, sugar and yeast. Mix until homogeneous, knead the dough and cut into two parts. In the first half, add the lemon zest.
Also halve the second part, for the dark patterns put 20 grams of cocoa plus three tablespoons of milk, and for the light ones the smaller amount of the same products. Knead until you get rolls with different shades of brown.
Divide and roll the dough into equal parts. Wrap two wicks of the two dark doughs in rolled white crust. Cut the tricolor rolls in half and arrange in a parchment-lined oblong shape.
Leave the brioche to rise and bake in a preheated oven at 170 degrees for 40 minutes. Make sure it is ready with a dry toothpick and then garnish the cake with chocolate ganache, powdered sugar or nuts of your choice. Cut and serve.
