Necessary products:

 

  • 500 grams of flour
  • 10 grams of salt
  • 100 grams of sugar
  • 3 broken eggs
  • 100 grams of cold butter
  • 120 milliliters of water
  • 42 grams of fresh yeast
  • juice of half a lemon
  • juice of half an orange
  • 1/2 teaspoon cinnamon powder
  • chocolate spread
  • 1 beaten egg yolk for spreading

 

Method of preparation:

 

Put all the ingredients (except the butter and yeast) in a bowl and attach the dough attachments to the mixer. Beat the mixture, adding the butter gradually. Finally, put the yeast dissolved in water, continue to stir until a smooth homogeneous mass. Pour on a floured surface and make the dough. Wait for it to double in volume and divide it into equal balls. Roll each into an elliptical shape.

 

At the end of the crust put liquid chocolate, and the other cut from the inside out lengthwise. Roll up, starting on the side with the filling. Make the other rolls in the same way.

 

Arrange them in a tray lined with a sheet of parchment and leave to rise. Glaze with beaten egg yolk, preheat oven to 180 degrees and bake until done. Cool the brioches, serve and eat them with pleasure.
