How To Cook Mackerel Meatballs With Green Sambal Sauce - Recipe

Required products :

  • 1 tablespoon olive oil
  • 250 grams of potatoes, peeled and cut into cubes
  • 1 tablespoon ghee
  • 2 red shallots, thinly sliced
  • 2 cloves garlic, finely chopped
  • 2 small hot peppers, finely chopped
  • 2 tablespoons chopped fresh curry leaves
  • 1 teaspoon dill
  • 1/3 tea cup of fresh milk
  • 2 broken eggs
  • 1 teaspoon flour
  • 200 grams of old bread with yeast, ground
  • frying oil

for the spice mix:

  • 1 tablespoon coriander seeds
  • 1 1/2 teaspoon cumin seeds
  • 1 teaspoon fennel seeds, hot pepper flakes, fenugreek
  • 1/2 teaspoon turmeric

for green sambal sauce:

  • 2 green onion stalks
  • 1 bunch of coriander, cleaned
  • 1 long green hot pepper, cleaned of seeds
  • 2 tablespoons coconut shavings
  • finely grated rind and juice of 2 limes

Method of preparation :

Turn on the oven to preheat to 180 degrees.

Grease a large tray and line it with paper.

Put the fish and grease it with olive oil, season and bake for 12 minutes until done. Clean it of skin and bones.

Boil the potatoes until ready, drain them, mash them and set aside to cool.

Grind all the products for the spice with added 1 tablespoon of salt. If desired, you can crush the seeds in a mortar.

In a pan, heat the ghee and fry the onion, garlic, hot peppers and curry leaves. After 2-3 minutes, add 1 tablespoon of the spice mix and fry for another minute. Remove from the heat and allow the mixture to cool.

Add onions, fish and dill to the cold mashed potatoes. Mix well.

With clean hands, form 16 small meatballs from the mixture.

Mix the milk and egg in a bowl. Put the flour in another bowl and the bread crumbs in a third.

Roll the meatballs in flour, egg and finally in the bread.

Arrange in the prepared pan and refrigerate for a minimum of 30 minutes, preferably overnight.

Meanwhile, prepare the green sambal sauce - blend all the products, seasoned with salt, until you get a puree. Transfer to a serving bowl.

Fry the meatballs in an oil bath until golden - about 3-4 minutes.

Drain them on kitchen paper.

Serve the fish meatballs with green sambal.
