How To Cook Madeleines With Lemon Glaze - Recipe

Required products :

  • 2 large eggs
  • 110 grams of fine sugar
  • 94 grams of butter
  • 1 teaspoon baking powder
  • 100 grams of unsalted butter, melted

For the lemon glaze :

  • peel and juice of 1 lemon
  • 160 grams of powdered sugar, sifted

Method of preparation :

  • Beat the eggs and sugar in a large bowl with a mixer for about 6 minutes.
  • In a separate bowl, mix the flour and baking powder and stir.
  • Sift 1/3 of the flour into the bowl with the eggs and use a wooden spoon or spatula to stir. Repeat with the remaining flour.
  • Put the butter in a small bowl, add 1 tablespoon of the dough, stir and return the mixture to the large bowl. Stir again.
  • Cover the dough with plastic wrap and refrigerate for at least 3 hours before baking the cupcakes.
  • Meanwhile, make the lemon glaze by mixing the lemon juice and grated rind with the powdered sugar with a wooden spoon.
  • Grease the made-up pan with butter, sprinkle with flour and store in the refrigerator to cool.
  • Use a spoon to fill 3/4 of the forms with dough, as the cupcakes will swell in the oven.
  • Bake in a preheated oven at 220 degrees for about 8-10 minutes until golden brown.
  • Allow the madeline to cool on a wire rack for 10 minutes before dipping them in the glaze.
