Required products :

  • 6 well-ripened mangoes (about 1 1/2 kg)
  • 500 milliliters of white wine vinegar
  • 450 grams of sugar
  • 1 tablespoon cumin seeds
  • 2 teaspoons coriander seeds
  • 10 grains of cardamom
  • 2 teaspoons black cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon turmeric
  • 3 crushed garlic cloves
  • 8 cloves
  • ginger root - about 1 inch in size, grated
  • 1 hot red pepper, cleaned of seeds and finely chopped

Method of preparation :

Peel a squash, grate it and cut it into small cubes. Put them in a large saucepan, add vinegar and sugar. Cook them for about 8-10 minutes.

Meanwhile, in a dry pan, roast the cumin, coriander and cardamom seeds until they release their aroma. Transfer them to a mortar and crush them.

Transfer the seeds to the fruit and add the remaining spices as well as 2 teaspoons of salt.

Return to the stove and cook on low heat for about 1 hour and 15 minutes to 1 hour and 35 minutes, depending on the density of the syrup. Stir every 10 minutes.

Transfer the mango chutney to sterilized jars while still hot. Turn the jars upside down and allow to cool. This way you can store it at room temperature.
