How To Cook Marinated Aubergines In Olive Oil With Oregano, Garlic And Hot Pepper - Recipe

Required products :

2 eggplants
garlic
white wine vinegar
olive oil
oregano
hot pepper
salt

Preparation :
Peel the aubergines, cut them into pieces about a centimeter thick and arrange them in layers in a deep bowl, sprinkling salt in each row. Squeeze them with a heavy object (you can use a pot of water, for example) to release the juice. Leave them to stand for 24 hours, then remove on paper, which will absorb excess liquid.
Transfer to a bowl or saucepan and pour over white wine vinegar. Let marinate for 24 hours, then drain the liquid and arrange in layers in a jar. Between the rows put crushed garlic, oregano and pieces of hot pepper to taste. Finally, pour olive oil, filling the dish to the brim, and store it in the refrigerator.
After 20 days, the marinated aubergines are ready to eat.
