Required products :

  • 500 grams of cheese (cow, sheep or goat)
  • 1 teaspoon olive oil
  • 1 lemon
  • 1 bunch fresh rosemary or dried savory
  • 2 cloves garlic
  • neutral vegetable oil (for example: corn, refined rapeseed or sunflower)

 

Method of preparation :

It is important to use a glass, enameled or plastic container when marinating. Aluminum versions are not for this purpose.

Pour olive oil into a suitable bowl, add the chopped rosemary leaves (or savory). Wash the lemon, dry it and grate the peel, which you put with olive oil, add the crushed garlic. Mix everything.

Cut the cheese into tiles 5 - 6 millimeters thick or into cubes with a side of 1 - 1.5 centimeters.

Choose a dish with a lid in which to marinate the cheese. Spread the marinade generously on the bottom, add the "naked" rosemary sprigs (without the leaves), if desired.

Then arrange a row of cheese, pour a few spoons of marinade, continue in the same sequence - cheese, aromatic olive oil ... So until the cheese runs out. Simply pour the remaining liquid on top.

If you like hot, you can sprinkle with ground chili peppers, for example.

Pour the oil you have chosen, it should cover the cheese completely.

Close the container with a lid and store in the refrigerator for 24 hours.

The longer it stays in the aromatic mixture, the tastier it will be. Store in the refrigerator in a closed container for 2 - 4 weeks depending on the quality of the cheese.
