How To Cook Marinated Eggplant - Recipe

Required products :

  • 6 eggplants
  • salt to taste
  • 1 1/4 tea cup white wine vinegar
  • 2 1/2 teaspoons water
  • 3-4 cloves garlic (peeled and thinly sliced)
  • leaves of a bunch of parsley, finely chopped
  • mint leaves finely chopped (optional
  • 1/2 teaspoon hot pepper flakes
  • 1/4 green pepper, finely chopped
  • 1-2 teaspoons olive oil
  • 1/4 tea cup of vinegar

Method of preparation :

Wash the aubergines and dry them, cut them into strips 7 millimeters thick.

Put the strips in a colander and sprinkle with salt. Leave to drain for 1 hour, putting something heavy on the eggplant.

After 1 hour, squeeze the aubergines and drain the excess water.

Transfer the aubergines to a large bowl and cover with 1 1/4 teaspoons of vinegar and 2 1/2 teaspoons of water (for a larger amount, use the ratio of 2 cups of water to 1 cup of vinegar).

In a large bowl, place the chopped garlic, parsley, optionally mint and oregano, red pepper flakes and pepper. Squeeze as much water as possible from the aubergines and put them in the bowl with the spices. Pour 1 to 2 cups olive oil and 1/4 teaspoon vinegar. Stir well.

Transfer everything to jars, pressing the products to expel the air from the jar.

Leave about 3 inches from the end of the jar free, and pour in the olive oil and vinegar to cover the aubergines.

Put screw caps on and store in the refrigerator. They should be ready for consumption after 24 hours, but another day on top will make them taste better.
