Method of preparation:
In a bowl, mix the cheese and cream cheese. Add finely chopped basil, oregano and olive oil. Season with pepper to taste and stir. On top of each slice of eggplant put the mixture and roll.
Arrange them in a pan greased with olive oil.
Heat the fat in a saucepan and fry the grated tomatoes. Season with salt, pepper, paprika and sugar to soften the acidity. Stir and cook over low heat. Mix the flour in the water and pour in a thin stream to the tomato sauce.
Stir to thicken and pour the mixture over the eggplant rolls. Preheat oven to 190 degrees and bake for 10-15 minutes. Cool, arrange the dish on a plate and garnish with fresh basil. Serve and eat with pleasure.
