Required products :

500 grams of boiled fish of your choice

300 grams of carrots

200 grams of onions

4 tablespoons tomato paste

400 milliliters of fish broth

3 cloves

1/2 teaspoon ground red pepper

2 bay leaves

13 grains of black pepper

5 grains of allspice

1.5 teaspoons salt

2 teaspoons sugar

vinegar 9% - to taste

6 tablespoons vegetable oil

 

Method of preparation :

Wash the fish well under running water, cut it into large pieces and cook until done. Then clean it of large bones and skin, trying to keep the pieces intact.

Cut onions into semicircles, grate carrots and pour these products into a deep suitable container with heated vegetable oil. Fry the vegetables until semi-cooked. When soft, add the tomato puree, spices (cloves, red and black pepper, allspice, bay leaf) and stew for 15 minutes under a lid. You should pour the broth, add sugar and salt, vinegar to taste and pour the marinade over the fish. Let everything simmer for 15 minutes so that the fish can be soaked in the aromatic liquid. When cool, refrigerate for 4 hours, after which you can serve as a cold appetizer.
