How To Cook Marinated Fried Eggplant With Japanese Rice - Recipe

Required products :

  • 2 tablespoons peanut oil
  • 3 cloves garlic - finely chopped
  • 1 tablespoon finely chopped ginger root
  • 750 grams of eggplant
  • 60 milliliters of myrin (sweet rice wine)
  • 60 milliliters of light soy sauce
  • 1 tablespoon sake
  • 1 tablespoon sugar
  • boiled sushi rice for serving
  • Chinese cabbage serving

Method of preparation :

Cut the eggplant into circles 1 cm thick.

Heat a wok pan on high heat. Add the oil and after it heats up, add the garlic and ginger. Fry for 30 seconds until they release their aroma. Put the eggplant and fry for 2 minutes on each side until browned. Add 1/4 tea cup of water, put a lid on and simmer for 3-5 minutes until the water evaporates and the eggplant softens.

Meanwhile, combine the soy sauce, sake, brown sugar and myrrh in a bowl. Stir until the sugar is melted.

Put the resulting mixture in the wok and fry for another 2 minutes, stirring to cover the eggplant with it.

Serve on pre-cooked rice and sliced ​​Chinese cabbage. Sprinkle with sesame and green onions if desired.
