Boil in a saucepan 8-9 cups of water, 1 tablespoon of white vinegar (to preserve the color of beets), and salt (optional).
Add the beets, cover, and cook for 40-50 minutes or until soft.
Drain, cool and peel the beets, then cut them into thin circles.
Mix the cornstarch, sugar, salt, and pepper in a saucepan. Gradually add the water and vinegar, stirring constantly.
Cook, stirring constantly until the mixture thickens and boils. Then add the beet slices and cook until warm.
Serve the marinated beets as a side dish to the main course.
