Required products :
1 kg of sheep cheese (you can also use goat or cow)
olive oil
fresh basil, parsley and other green spices of your choice
fennel seeds, a mixture of Italian herbs
grains allspice
black pepper
Method of preparation :
For 1 kg of cheese you will need 2 jars with a capacity of about 750 milliliters each.
Cut the cheese into cubes or break with your hands. Wrap in paper so that it absorbs moisture.
Then roll in a mixture of the listed dry spices and place in the jars, intertwining the fresh green spices between the pieces of cheese.
Add allspice and black pepper. Drizzle with olive oil and refrigerate and leave to stand for a week.
