Required products :
1 kg of bacon (from ham)
4 tablespoons salt
10 grams of black pepper
40 grams of hot red pepper
4 cloves garlic
Method of preparation :
Make deep cuts on the surface of the bacon, you will get a kind of harmonica.
Pour water into a suitable container, put 2 tablespoons of salt and place on the stove. Once the liquid boils, put the bacon in it and let it boil for 30 minutes. Allow to cool and then cover generously with salt, then with black pepper and crushed garlic cloves. Let stand for several hours and refrigerate overnight.
The next day, cut the bacon into pieces (about 70 grams each), which are generously rolled in red pepper.
Arrange tightly in a container and store in the refrigerator.
