How To Cook Marinated White Fish With Pumpkin And Couscous - Recipe

Required products :

  • 600 grams of white fish
  • 500 grams of pumpkin (cleaned and peeled)
  • 1 large onion
  • 250 grams of couscous
  • parsley
  • salt and pepper
  • yogurt or sour cream to serve

 

For the marinade:

  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 2 teaspoons unground cumin
  • 1 teaspoon ground black pepper
  • a pinch of cayenne pepper
  • salt and pepper

 

Method of preparation :

In a small bowl, make the marinade by mixing olive oil with different types of pepper, cumin and salt to taste. Add the crushed garlic cloves and mash.

 

Cut the fish fillet into small pieces, spread with the marinade and leave for 10 minutes to absorb the flavors and aromas.

 

Meanwhile, grate the pumpkin.

 

Bake fry for about 5 minutes on each side.

 

Take them out and put them in a pan with a lid to keep them warm, and use the pan with the fat to fry the vegetables. Cook onions for 7 minutes.

 

Then add the pumpkin. Season and fry until fully cooked.

 

Boil the couscous according to the instructions on the package.

 

Pour parsley over the vegetables at the end of cooking. Add extra salt, if necessary, and remove the pan from the heat.

 

Mix them with the couscous, add the fish pieces and stir.

 

The fish will be torn, that is the goal.

 

Serve the dish with yogurt or sour cream.
