How To Cook Mashed Parsnips And Potatoes With Hazelnuts - Recipe

Required products :

  • 750 grams of parsnips, peeled and cut into 5 cm slices
  • 750 grams of sweet potatoes, cut in bulk
  • 1 cube vegetable broth
  • 50 grams of blanched hazelnuts
  • 1 tablespoon maple syrup
  • 150 milliliters of fresh milk
  • 2 tablespoons olive oil with truffles
  • 3 green onions for serving

Method of preparation :

Put the parsnips and sweet potatoes in a large saucepan and cover with cold water. Put them to boil for 25 minutes until soft.

During this time, roast the nuts in a dry hot pan for about 1-2 minutes. Transfer them to a bowl.

Drain the prepared vegetables through the water through a colander and leave for a few minutes to drain completely.

Return them to the pan and mash them with a potato press. Pull the puree into one and pour the milk into the other end of the saucepan. Heat until the milk starts to boil and stir with the puree. Add the olive oil and stir.

Serve by placing a few slices of coarsely chopped green onions, hazelnuts on each portion and pour a little olive oil with truffles.
