Required products :

  • 2 teaspoons flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 110 grams of cold butter
  • 250 grams of sweet potato puree
  • 1/3 tea cup of fresh milk

Method of preparation :

Turn the oven to 200 degrees to preheat.

Meanwhile, sift the flour together with the salt, baking soda and baking powder. Add the butter and rub it with your fingers to grind and get small crumbs.

Mix the puree with the milk and beat with a fork until a homogeneous mixture is obtained. Pour it into the flour and knead the dough with a spatula. When the dough is formed into a ball, transfer it to a floured kitchen counter.

Fold the dough several times, flouring it if necessary, so that it does not stick to the hands and the hob.

Roll out to a thickness of about 1.5 centimeters and cut into circles about 4 centimeters in diameter. Arrange them in a pan or cast iron fireproof pan, close to each other.

Roll out the leftovers again and form more biscuits.

Bake until the biscuits swell and turn golden brown - about 25 minutes. Allow them to cool for 5 minutes before removing them from the pan.

Sweet potato biscuits can be stored for up to 1 week in a tightly closed container.

Serve them with eggs or soups.

Note: Prepare the mashed potatoes yourself by piercing the sweet potatoes and heat them in the microwave until ready - ie. while a fork enters them calmly. Then peel and mash them.
