Boil the diced potatoes in well-salted water until soft. Check with a fork when it pierces them with ease, so the vegetables are ready.
Squeeze the potatoes and put them in a bowl and mash them with a potato press.
Melt the butter in a saucepan, being careful not to burn it, and mix it with the milk. Add the warm mixture to the potatoes, stirring constantly to obtain a creamy airy consistency of the mashed potatoes.
Add the sour cream and season with salt and pepper to taste.
Serve sprinkled with fried bacon, cheddar cheese and a little sour cream. Sprinkle with chives.
The dish can be served as a main or appetizer.
