How To Cook Mashed Potatoes With Pumpkin And Vegetable Stuffing - Recipe

Required products :

1.5 kg of potatoes
150 grams of pumpkin
1 onion
1 carrot
1 small zucchini
2 tablespoons chopped dill and parsley
1 raw egg
salt to taste
water
oil

 

Method of preparation :

Peel the potatoes and pumpkin, wash them and cut into cubes. Put them in a saucepan, fill with water and cook until done.

Meanwhile, peel the onion, carrot and zucchini. Grate them with a fine grater and fry in hot oil over low heat for about 15 minutes. At the end of cooking, add the chopped green spices and turn off the stove. Leave the vegetables in the bowl to mix their flavors and aromas.

Remove the boiled potatoes and pumpkin from the heat, drain the water and mash, pouring a little of the vegetable broth to make a more liquid puree.

Beat the egg and add it to the puree. Then add the vegetable stuffing. Mix everything thoroughly, close the container with a lid, wrap it in a blanket and leave for an hour.

Then you can sprinkle the puree with fresh green spices and serve.
