How To Cook Mashed Potatoes With Roasted Garlic And Green Spices - Recipe

Required products :

  • 1 kg of potatoes
  • 1 large head of garlic
  • 1 bunch coriander
  • 1 bunch parsley
  • 5-6 stalks of green onions
  • 100 milliliters + 2 tablespoons olive oil
  • freshly ground black pepper to taste
  • salt to taste

 

Method of preparation :

Cut the head of garlic in half without peeling it. Put it on a sheet of aluminum foil measuring 20 x 20 cm, add the white parts of green onions, pour two tablespoons of olive oil, salt and wrap the vegetables with foil, forming a "bag", leaving enough free space for steam. Bake for 25 minutes in the oven at 180 degrees.

Meanwhile, peel the potatoes, cut them into large cubes and boil in salted water (they should almost boil).

Cut the stems of coriander and parsley stalks and grind their leaves in a blender together with the green part of the onion and 100 milliliters of olive oil.

When you take the garlic out of the oven, peel it and add it to the puree together with the roasted white onion. Beat until smooth.

Drain the liquid from the already boiled potatoes (separate half a cup of tea from the decoction just in case), mash them to a puree, mix with the green sauce and mash once more.

Season to taste with freshly ground black pepper and salt. If necessary, dilute the puree with the decoction you separated.

Serve immediately.
