Bruschettas are prepared very quickly and are very tasty. This time we present them with a Mediterranean flavor. Cooked with shrimp, slightly bitter chicory and fennel are an explosion of flavors that is not for everyone. Will you like them?

Required products :

  • juice of 1 lemon (about 2 tablespoons)
  • 1 small red chicory (about 200 grams)
  • 1 fennel
  • 1 red onion
  • 6 thin slices of bacon
  • 200 grams of cleaned shrimp
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • 1 teaspoon parsley
  • 4 thin slices of bread with yeast
  • Manchego cheese

Method of preparation :

Turn the oven to 220 degrees.

Thinly chop the chicory, fennel and onion, put them in a pan and pour olive oil over them, season with a little salt and pepper and bake for 10-12 minutes until soft.

Meanwhile, fry the bacon until crispy and place it on a paper to drain, cut into pieces.

Season the shrimp with salt and pepper.

Pour the fat from the bacon, except for 1 tablespoon and fry the shrimp for 2-3 minutes on one side until pink.

In a bowl, mix the balsamic vinegar, lemon juice, sugar and season with salt and pepper. Pour the resulting dressing over the roasted vegetables. Stir in the bacon, shrimp and parsley.

Toast the bread slices and serve, placing the shrimp with vegetables on each. Finally, cut a few thin flakes of Manchego cheese or Parmesan.
