Necessary products:

1 kg of herring

1 cup rice

2 tomatoes

1 stalk of celery

3 sprigs of parsley

8 cloves garlic

2 bay leaves

1 onion

10 grams of sweet red pepper

40 milliliters of olive oil

4 liters of water

salt and pepper - to taste

Method of preparation:

Clean and wash the fish. Remove the head, entrails, boneless. Do not throw away the bones and head, but put them together with the fillet in a saucepan. Add parsley, bay leaves, celery and 2 cloves of garlic. Pour in the water and let everything boil for 35 minutes without closing the container with a lid, periodically removing the foam that has formed. When you remove the broth from the hob, strain it. Separate the fish from the bones and when it cools down a bit, cut it into small pieces (but not too small).

Peel an onion and chop finely, mash the garlic. Take a deep frying pan or saucepan and fry the onion and garlic in olive oil until transparent. Make incisions in the tomatoes and sauté them, adding them to the onion and garlic. Finally, add a spoonful of paprika. When the tomatoes are ready, pour them into the broth and let them cook for 12 minutes. Then add the rice and let it cook over medium heat for about 25 minutes. Then put the fish, season with salt and pepper, cook for another 5 minutes (according to the readiness of the rice).

Pour the finished soup into a plate, decorate with parsley leaves and serve.
