Required products :
300 grams of sugar (150 grams for marshmallows and 150 grams for cream)
140 grams of wheat flour for marshes
90 grams of butter (50 grams for marshmallows and 40 grams for cream)
1/4 tea cup of fresh milk
9 eggs (3 whole + 3 yolks for marshmallows and 3 pieces for cream)
1/2 teaspoon freshly squeezed orange juice (can be replaced with lemon)
1 tablespoon grated orange peel (or lemon)
1/4 teaspoon salt
1 teaspoon baking powder
Method of preparation :
Grate the citrus peel. Mix in a saucepan orange juice 40 grams of butter and 150 grams of sugar. Bring to a boil. Beat 3 eggs and, stirring constantly, add the hot juice in a thin stream. Put the mixture on low heat and stir, wait for it to boil. Let it cook for 5 minutes until it thickens, without stopping to stir.
Then strain if you do not want to feel pieces of citrus peel, but if this does not bother you, you may not do it. Transfer the mixture to a clean container, cover with plastic wrap (it should touch the surface of the cream so that no crust forms) and cool. The cream is ready.
Start making swamps. Preheat oven to 190 degrees. Put the butter (50 grams) and the milk in a saucepan and bring to the boil. Using a mixer, beat 3 whole eggs + 3 yolks, add sugar (150 grams). Stir for about 10 minutes, the consistency should be like a thick cream.
Sift the flour together with the baking powder and salt, add to the eggs and mix thoroughly with a spatula, scooping from the bottom up.
Heat the milk with the butter once more, just before it boils, pour in the dough and stir.
Cover the bottom of the pan (diameter 42 x 30 cm) with baking paper, pour the dough and level the surface. Bake (about 10-15 minutes). The finished loaf is golden. Spread it with cream and roll it up. Refrigerate for at least an hour. Before serving, sprinkle with powdered sugar.
