How To Cook Mexican Bruschettas With Beans, Avocado And Tomatoes - Recipe

Required products :

  • 1 baguette, cut into slices
  • 1 avocado, peeled and sliced
  • 2 limes - grate the skins, squeeze the juice
  • 1/2 red onion, finely chopped
  • 4 green onion stalks, finely chopped
  • 200 grams of cherry tomatoes, cut into quarters
  • 400 grams of red canned beans, drained
  • 1 hot pepper, finely chopped
  • 30 grams of parsley or coriander, finely chopped

Method of preparation :

Turn the oven to 200 degrees. Arrange the slices of bread in a pan and pour olive oil, bake for 5 minutes, turning in the middle of time to bake evenly.

In a bowl, mix all the vegetables, keeping some of the coriander to sprinkle at the end.

Put the vegetables on the bruschettas and sprinkle with coriander. Serve and, if desired, pour extra olive oil.
