Learn how to cook "Mexican corn salad with feta and mayonnaise". Delicious recipe.

Corn with mayonnaise is not a new discovery, but with hot pepper, lightly fried corn and feta cheese the taste becomes even richer. Of course, Mexicans really like spicy food, and if you are not such a big fan of spicy options, reduce the amount of hot pepper or skip it altogether.

Required products :

  • 2 tablespoons oil
  • 3 teaspoons corn
  • left
  • 2 tablespoons mayonnaise
  • 60 grams of feta cheese, crushed
  • 1/2 cup finely chopped green onions (green only)
  • 1/2 cup coriander leaves, finely chopped (or parsley)
  • 1 hot jalapeno pepper, finely chopped
  • 1-2 cloves of garlic, grated
  • 1 tablespoon lime juice
  • hot cayenne pepper to taste or hot pepper flakes

Method of preparation :

Heat the fat in a pan and add the corn, season to taste and stir, cook it for about 3-4 minutes.

You can use corn cobs - 4 pieces. Then bake them in the pan for about 10 minutes, turning periodically. Then separate the nipples. Transfer to a large bowl. Add all other products to the warm corn and serve immediately.
