Also known as farm eggs, this recipe is very tasty and rich in flavors. With the typical products used in Mexican cuisine, you will easily diversify the family menu.

Required products :

  • 400 grams of potatoes
  • 1 onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 100 grams of sweet canned corn
  • 1 tablespoon paprika
  • 1 green hot pepper
  • 1 can of chopped tomatoes (400 grams)
  • 4 large eggs
  • fresh coriander

Method of preparation :

Peel the potatoes and cut them into cubes (approximately 2 x 2 cm). Put them in a saucepan and cook for 6-7 minutes. Squeeze them out of the water.

In a deep frying pan, heat the olive oil and add the onion. Fry until soft and add the potatoes. When they become slightly crispy in the middle, season with red pepper, crushed garlic cloves, pour the corn and chopped hot pepper. Fry all the vegetables for 2-3 minutes, add the canned tomatoes and stew under a lid.

When the potatoes are completely soft, season with salt and pepper. Make 4 nests in the mixture and beat one egg in each. Cover with a lid and cook for a few more minutes. Finally, sprinkle with fresh coriander and serve.

Alternative method of preparation :

You can prepare the dish in the microwave: Pour 100 ml of water into a bowl and add the potatoes. After 8 minutes in the microwave and squeeze. Add garlic, olive oil, red pepper, onion and hot pepper and cook for another 3 minutes. Add the tomatoes, sweet corn and return to the microwave for 4 minutes. Finally, make 4 nests in the mixture and put the eggs. After 3 minutes the dish is ready. Sprinkle with coriander.
