Required products (for 6 servings) :
6 eggs
6 corn cakes Tortilla
400 grams of canned tomatoes in their own juice
450 grams of fried mashed
yellow cheese or feta cheese
1 teaspoon olive oil
1 onion
2 cloves garlic
1 hot pepper jalapeno
1/2 teaspoon ground cumin
1/4 teaspoon
ground salt black pepper to taste
1 lime
coriander to taste and optional
Method of preparation :
Peel the garlic and onion, remove the seeds from the peppers and chop the hot vegetables. then fry them together in hot olive oil for 4-5 minutes. Season with cumin, salt and pepper, stir.
Add the tomatoes together with the juice and let the sauce boil. Once this is done, let it boil for about 5 minutes (until it thickens), not forgetting to stir. Remove from the heat.
Sprinkle the pan with olive oil and heat the cornbread in it. Arrange them on a plate, and on each dough base put 2 tablespoons of bean puree, 1 fried egg, two tablespoons of tomato paste. Sprinkle with chopped coriander, if desired, and on top - grated cheese or feta cheese.
Garnish with slices of lime or avocado.
The dish is ready.
