How To Cook Mexican Salad With Zucchini, Beans And Corn - Recipe

Required products :

  • 1 red pepper
  • 1/3 tea cup red onion
  • 1 cup diced zucchini
  • 1 cup diced cucumber
  • grains of 1 head of boiled corn
  • 1/2 pepper Jalapeno
  • 1 can of black beans (400 grams)
  • 1/3 tea cup fresh coriander
  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • 1 lime
  • 2 teaspoons cumin
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt and pepper

Method of preparation :

Cut all the vegetables into cubes. Put them in a bowl, add the corn and drained beans, hot pepper and coriander.

In a small bowl, squeeze the garlic, add the lemon juice, olive oil, mustard, cumin, grate the lime peel, season with salt and pepper. Mix the products well.

Drizzle the salad with the dressing and serve chilled or at room temperature.
