Required products :

  • 1/4 tea cup olive oil
  • 115 grams of pork belly meat, finely chopped
  • 4 crushed garlic cloves (whole)
  • 120 grams of chorizo, cut into slices
  • 1 red pepper, peeled and sliced
  • 1 hot pepper
  • 115 grams of kale, without stems, chopped
  • 225 grams of bread cut into cubes (about 6 cups)
  • 60 milliliters of water
  • 1 teaspoon smoked paprika
  • 2 tablespoons parsley

Method of preparation :

Put olive oil in a large pan and fry the belly meat along with the onion and garlic, stirring occasionally - for about 8 minutes. Add the chorizo sausage and continue cooking until it acquires a brownish tan - for about 3 minutes.

Remove the meat and vegetables with a slotted spoon and discard the garlic.

Increase the temperature of the stove and in the same pan add the peppers and fry them, seasoned with salt and pepper, for about 3 minutes until browned. Add the kale leaves, when soft transfer to a plate.

It's time to put the croutons in the fat in a pan. Stir them and lightly pour water over them. Fry them, stirring occasionally to prevent them from sticking to the bottom of the pan. Try to break the bread into crumbs during frying. If necessary, add a little more water. Season with smoked pepper.

Finally, combine everything in the pan with the bread and stir to mix the flavors. Cook for 1 minute and season with salt to taste, sprinkle with parsley.

If desired, you can serve the dish with fried eggs.
