Required products :

1 liter of pasteurized milk with a fat content of 4.5%

1 lemon

10 egg yolks

10 teaspoons granulated sugar

1 teaspoon ground cinnamon

1 stick of vanilla

 

Method of preparation :

Pour the milk into a saucepan, cut the vanilla stick lengthwise and pour the seeds into the milk, then put the stick itself.

Wash the lemon well with a brush. Peel a squash, grate it and put it in a saucepan. Put the bowl with the milk on low heat until it boils, but do not cook. Turn off the stove, do not remove the pan, close it with a lid and leave for 15 minutes. Then remove the vanilla and lemon.

Put the yolks in a saucepan with a thick bottom, beat them together with the sugar until you get a fluffy white mass.

Without stopping to beat, add the hot milk, pouring it in a thin stream.

Place the pan on the hob at minimum temperature (maybe in a water bath) and let the dessert cook until thickened (about 15 minutes), stirring all the time with a wire whisk.

Transfer the cream to a cold bowl and allow to cool to room temperature. Stir periodically so that no "crust" forms on the surface.

Distribute the dessert in suitable wide cups or bowls and store in the refrigerator for at least 2 hours.

Before serving, sprinkle with cinnamon.
