Required products :

  • 3 1/2 teaspoons fresh milk
  • 5 soft bananas, cut into cubes
  • 1 empty vanilla pod
  • 1 teaspoon toasted sugar
  • 1/3 tea cup cornstarch
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cloves
  • the yolks of 10 eggs
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons cream

Method of preparation :

Combine banana, milk and vanilla pod in a saucepan. Bring the mixture to a boil on the stove, stirring occasionally with a spatula. When the liquid starts to boil, remove from the heat, cover and allow to cool to room temperature for 4 hours.

Bring the milk back to the boil to a boil, stirring occasionally. Then strain through a sieve, taking care that the banana pulp does not pass through the sieve when you press the pieces of fruit. Squeeze the milk absorbed from the vanilla pod. The rest of the banana can be cooled and used later in the preparation of banana bread or pancakes.

Put the sugar with the cornstarch, salt and cloves in the pan. Stir, then add the yolks. Stir in the banana milk and return to the hob, warming to low. Stir constantly until the cream begins to form steam and thicken, about 5 minutes.

Increase the temperature and continue cooking until the cream thickens more, this will take another 5 minutes. When it starts to form bubbles, stir for 90 seconds, then remove from the heat and add the vanilla.

If you wish, you can strain the cream again through a sieve to remove all the larger pieces, or if you accidentally get a cut cream.

Transfer the cream to a ceramic pan and store in the cold for 2 hours.

Finish by beating the cream in a mixer bowl until stiff peaks. Add the banana cream, stirring with a silicone spatula, until combined, adding the cream in portions.

Transfer to a pouch with a suitable nozzle and squirt the cream into cups. Garnish with crushed cocoa beans, fresh fruit, biscuits, cream or whatever you want.

The cream can be stored for up to 24 hours in the refrigerator.
