Cranberries are very tasty and useful small fruits. They are low in calories, which makes them suitable for use in the preparation of many healthy desserts. The bad thing is that they are difficult to eat because they are very soft, juicy and small. But they can be pureed and used to give a beautiful pink hue to desserts. In combination with yogurt you can prepare a beautiful and light dairy dessert (cake) for any occasion.

To prepare the milk cake, you need:

To prepare the marshmallows for the cake:
  • 280 grams of flour
  • 1 teaspoon salt
  • 1 tablespoon vinegar
  • 2 tablespoons oil
  • 1 teaspoon warm water
For the preparation of the milk cream for the cake:
  • 200 grams of yogurt
  • 200 grams of cream cheese
  • 85 grams of powdered sugar
  • 150 grams of whipped cream
  • 220 grams of blueberries
To decorate the milk cake:
  • blueberries (or other berries of your choice)
  • mint
  • edible flowers

How to prepare milk cake with berries:

To prepare marshes:

Put the flour in a bowl, add salt and make a well in the center. Pour vinegar, oil and 2-3 tablespoons of water into the well. Start kneading and gradually pour out the remaining water. Form a soft dough, wrap in foil and refrigerate for 1 hour.

Roll out the cooled dough and place it on the bottom of a 16-18 cm cake tin with detachable walls. Bake for 20 minutes at 180 degrees.

To prepare the milk cream with blueberries and cream cheese:

While the base for the cake is baking, mix the yoghurt with the cream cheese and powdered sugar. Mix well until a homogeneous mixture is obtained (use a mixer or wire whisk).

Add the cream and beat again. Finally, add the blueberries.

Pour the milk mixture on the cooled pan, flatten and refrigerate for 3 hours. Once firm enough, remove the cake from the refrigerator.

Decorate with fresh blueberries, edible flowers or mint of your choice. Cut into pieces and serve.

A few tips that can be useful when preparing a milk cake with berries

  • You can use plain white flour or combine 1 part wholemeal with one part wheat or another type of flour.
  • You could replace blueberries with another type of berries (strawberries, raspberries or others) or with your favorite seasonal fruits. It is advisable to choose soft types if you want to puree them to make a milk cake with a nice creamy texture and a beautiful pink color.
  • If you do not have fresh berries, you can use frozen, leaving them to thaw slightly before adding them to the milk cream.
  • Experiment by adding lemon or orange zest to the milk cream to add citrus to the cake. If you wish, use an essence of your choice.
  • The cake can be stored for a few days in the refrigerator, but it is unlikely that a piece of it will remain after everyone has tried it.
