Required products :

  • 2 tablespoons oil
  • 1 small onion, cut into cubes
  • 1 large bunch fresh spinach, chopped in bulk
  • 1 small sweet red pepper, finely chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 pieces of chicken breast, pre-cooked and sliced
  • 500 milliliters of chicken broth
  • 400 milliliters of fresh milk
  • 230 grams of soft cheese, diced (white brined, melted, mozzarella)
  • 1/2 teaspoon cooking cream with fat content 18%

Method of preparation :

Pour the oil into a saucepan and place on a hot plate over medium heat. Once the fat boils, pour in the diced onions and peppers. Fry them over medium heat for about 6 minutes. When soft, add the spinach and garlic.

Then add the butter. When it melts, carefully add the flour, stirring with a wire whisk until smooth.

It's time for the chicken, then pour the broth and milk. Wait for the soup to boil and add the cheese, stirring constantly until it melts (it takes about 5 minutes).

Finally, add the cream, let the liquid boil again, reduce the heat and let the soup cook on low heat for 25-30 minutes.

Serve hot.
