The traditional Bulgarian milk salad or also known as Snow White salad is prepared with pickles, yogurt, nuts, garlic and dill. It has been known since 1970 and is popular to this day.

Required products :

  • 1 liter of yogurt
  • 4 - 5 pickles (or to taste), you can use fresh
  • a few sprigs of dill
  • 3 cloves garlic
  • 3 tablespoons crushed walnuts
  • salt to taste
  • olives for decoration
  • lettuce leaves to serve

You can change the quantities of the products according to your taste preferences and the desired number of servings.

Method of preparation :

Pour the yogurt into a linen or cotton cloth, cheesecloth, tie and hang in a suitable place and leave for as long as necessary to drain excess liquid. You can also use a colander for the purpose in which you put the towel.

Transfer the expressed milk (it should have the consistency of thick cream) to a deep bowl.

Cut the cucumbers into small pieces (you can peel them if you use fresh ones), but do not grate them.

Using a blender, grind together the fennel leaves with 1-2 pinches of salt, walnuts and peeled garlic cloves.

Add the cucumbers to the milk, add the aromatic mixture you got in the blender. Mix everything thoroughly and serve on a lettuce leaf.

You can shape it into balls of ice cream, if the density allows, sprinkle with crushed walnuts, decorate with olives, dill or your choice.
