How To Cook Milk Soup With Slow Fried Leeks And Onions - Recipe

Required products :

  • 500 grams of yogurt
  • 1 tablespoon olive oil
  • 80 grams of butter
  • 4 large onions, thinly sliced
  • 1 star anise
  • 2 stalks of leeks, cut into 1-centimeter circles
  • 2 green onion stalks, finely chopped
  • 1 teaspoon flour
  • 2 teaspoons vegetable broth
  • 1 teaspoon dried mint
  • 1/2 teaspoon curry and turmeric
  • 1/4 tea cup raisins soaked in hot water
  • 1/2 cup roasted walnuts, crushed
  • dill and parsley for sprinkling

Method of preparation :

Put the milk in cheesecloth and tie it. Leave to drain for 1 hour.

Meanwhile, put the olive oil and half the oil in the pan. Fry the onion in it together with the anise star, stirring occasionally for 15 minutes. Then add the leeks, green onions and cook for another 25 minutes until the onions are caramelized. Remove the anise and keep the onion warm.

Mix the flour with a little broth to get the consistency of a paste. Then pour the remaining liquid and stir again.

Add the drained yogurt and mix well. Season with dried mint.

Transfer the mixture to a clean saucepan and cook on low heat to simmer slightly. Stir when the mixture starts to become creamy, then season.

Meanwhile, heat the remaining oil and add the curry and turmeric. When it starts to fry, remove from the heat.

Drain the raisins and place them in 4 bowls. Spread the onion and leek filling on top, add dill and mint and pour over the milk soup. Finally, add a tablespoon of curry butter.
