How To Cook Milk Soup With Zucchini, Potatoes, Peppers And Corn - Recipe

Necessary products:

 

  • 200 milliliters of cold milk
  • 300 grams of yogurt
  • 200 milliliters of cold water
  • 200 milliliters of vegetable broth
  • a few sprigs of fresh parsley
  • 2 tablespoons chopped celery
  • 2 potatoes
  • 50 grams of sweet corn
  • 2 chopped roasted peppers
  • salt, pepper
  • 2 finely chopped zucchini
  • olive oil
  • 1 diced carrot

 

Method of preparation:

 

Pour the milk and water into a saucepan, bring the mixture to a boil. Season with salt and add the zucchini and potatoes. Once cooked, remove from the heat, cool and puree to medium density.

Pour the broth, return the soup to the stove, reduce its power to medium and add the celery, corn, chopped peppers and carrots.

Stir and season with olive oil, salt, pepper and chopped fresh parsley. Cook over low heat for 30 minutes and cool. Add the yoghurt mixed with a ladle of the cool soup, stir and pour the soup into bowls. Serve and enjoy the taste.
