Clean the spinach from hard and stale parts, wash it several times, changing the water, and finally rinse under running water.
Put water on the stove. When it boils, pour the spinach leaves into it and after 2-3 minutes remove them, draining the liquid with a colander. Save the decoction.
Squeeze the leaves well and cut them into small pieces.
Stew the flour in the butter and pour a little of the water in which you scalded the spinach. Stir thoroughly to avoid lumps.
Pour the mixture into a saucepan, pour a cup of tea from the decoction and wait for it to boil. Then add the spinach, let the water boil again and pour the milk. If necessary, use more spinach decoction.
Season with black pepper and salt. When the soup boils, turn off the stove.
Serve with croutons, chopped fresh parsley and boiled eggs.
