How To Cook Minced Terrine With Prosciutto, Pistachios And Fresh Herbs - Recipe

Required products :

  • 500 grams of minced pork
  • 500 grams of minced beef
  • 250 grams of prosciutto / approximately 20 thin slices /
  • 1 large clove of garlic, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1/4 tea cup fresh basil, finely chopped
  • 85 grams of pistachios, peeled and chopped in bulk
  • salt and pepper to taste

Method of preparation :

 

 

 

  • Preheat the oven to 180 degrees and cover the bottom and walls of the bread pan with baking paper. Make sure the sheet is large enough to fold the terrine on top.
  • Arrange the prosciutto slices as shown in the photos.
  • In a large bowl, mix the remaining ingredients, including the remaining prosciutto.
  • Season with salt and freshly ground black pepper and knead the minced meat briefly.
  • Distribute it in the form, press with your palms and cover with the slices of prosciutto coming out of the form.
  • Cover with baking paper and double aluminum foil, sealing the edges well.
  • Place the form in a deep pan and add hot water to the middle of the walls.
  • Bake for 90 minutes.
  • When the terrine is ready, take it out of the oven and without removing the aluminum foil, press on top with a heavy object that fits in the form - cans, full jars, etc.
  • Allow to cool completely to room temperature and refrigerate overnight.
  • Turn it over on a tray, cut into slices and serve.
