Prepare a wonderful appetizer of pumpkin with polenta, full of vitamins and breathtaking autumn. If you do not like porridge, try to prepare it this way, you may like it. Enough flavored and slightly toasted, cornmeal is much tastier than regular porridge.

Required products :

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 teaspoons crushed garlic
  • 2 teaspoons drained canned chickpeas
  • 8 teaspoons of water
  • salt and pepper to taste
  • 2 teaspoons cornmeal
  • 1 small pumpkin, peeled and cut into small cubes
  • 3 tablespoons olive oil
  • rosemary for serving

Method of preparation :

Heat olive oil and fry onion with garlic for 5 minutes until soft.

Add nahuta and water, prepare. Cook for 10-15 minutes.

Blend and return to the stove to boil again.

Add the semolina, stirring constantly, and cook for about 15-20 minutes until thickened.

Pour into a pan and flatten with a spatula.

Cover with foil and refrigerate for 2-3 hours to set.

Meanwhile, preheat the oven to 200 degrees.

Grease the pumpkin and season it with salt and pepper.

Bake for 30 minutes, stirring occasionally.

With a cookie cutter, cut the polenta circles (about 5-6 cm) and arrange them in a tray. Coat them with olive oil and bake them for 30-40 minutes until they acquire a crispy crust.

Put a pumpkin and a sprig of rosemary on each piece of polenta.
